Have your ex-girlfriend sign a document declining to serve and resigning as trustee of your trust, and then she nominates a successor trustee in her place.
Also, have the beneficiary (you?) sign a document “Beneficiary’s Acknowledgement of Successor Trustee.” You might want to get an “Acceptance by Successor Trustee” stating that s/he/they accept the role. Might also add a “Trust Certification by Successor Trustee” confirming that the trust has not been modified or amended and then restate the assets as of time of change of trustee.
I have a couple of properties that I took Sub 2 by putting the properties into a Land Trust and recording it and had the sellers assign there benificial interest over to me and my gf and not recording that part and using her best friend at the trustee. My gf became an exgf and the trustee has since moved out of state and demands to be take off as trustee. How do I go about that- what documents do I need the current Trustee to sign to be completely off all public records and how do I appoint another Trustee. Thank you.

As Rick has said, this is not complicated.
A complication you might later encounter is the resistance of some title co. LPO and you might then hear that some other/additional doc is required.
But as long as your present trustee resigns in writing, notarized and signed; and your new appointment is in writing and signed, and the new T’ee has accepted in writing, signed and notarized, this should answer the LPO’s objections if any.
The NP’s acknowledgements are really only for purpose of your having an indendent witness and such would also be required to record those docs.
