Patch, you are making way too big a deal over this. Use either an S-Corp or a LLC. It does not matter - Just do it. After you have been in business a while and developed your own area of specialization you can decide what works best then. Start today.

If you have separate LLC’S or Corps that own several properties, are those entities owned by the individual or by another entity.
What reason would one want to own a LLC that is solely
owned by an S-Corp.
4a) What are the tax benefits?
If one were trying to build a professional organization (ie a big company), is it better to llc or corp… that is,
pass through the profits or allow the company to hold em and build upon them (C-corp)…
